Banana pancakes

Banana pancakes

We went back to Hungary last summer, as a vacation for 2 weeks. My Mom made this banana pancakes a few times for breakfast. She learned it from my sister, so I mixed their recipe and made my own recipe. This is one of my new favorite. Simple, healthy but a little bit time-consuming.

Ingredients for about 8 pancakes:

2 bananas
4 eggs
1-2 tbs oat flours
1 tbs vanilla protein powders (optional)
as needed 50 ml milk which is about 3 tbs (I used lactose free milk)
coconut oil

The dough is thick but it is good. You can put 2-3 tbs milk in it. Mix ingredients with blender in a deeper bowl and it is ready to bake.

Bake it on low temperature because it burns very quickly!!! Use 1 tsp of coconut oil before each baking. I always use a small frying pan because the pancake is broken easily. I bake several small pancakes. When I see that the edge is slightly browned, then I turn it and bake for 1-2 minutes more.
That's it. You can eat it by itself or with jam.

I ate it with fork and knife because you can't roll it up.
